LUNCH AND BREAKFAST MEALS
Lunch consists of:
2 oz. Protein Source (Meat, Cheese, Yogurt, Seeds, Beans)
2 servings Whole Grain Bread or Starch
½ Cup Fruit
½ Cup Vegetables
8 oz. Non Fat Milk
Dessert of the day
Breakfast consists of:
1 oz. Protein Source (Meat, Cheese, Yogurt, Seeds, Beans)
1 Serving Whole Grain Bread or Starch
¼ Cup Fruit or Fruit Juice
¼ Cup Potato or Starch
8 oz. Non Fat Milk
OFFER VS. SERVE
Students must choose three of the five items offered for lunch or they will be sent back to the serving area to make more selections. We have found that when students serve themselves, they are more likely to eat what they take. Studies have also proven that eating disorders can result if adults force children to eat large quantities of food, especially if it is something they do not like. Again, students must choose two of the five items offered for breakfast.
Both meals will comprise two thirds of the total nutrient intake for children for the day according to USDA Federal Guidelines.
Emmett Williams Nutrition Services is once again offering the fresh fruit and vegetable salad bar for students and staff! Students may choose from two hot/cold entrees or the salad bar. The salad bar is a complete lunch which includes diced chicken, ham, eggs or hummus, whole grain roll, garlic toast, or bread stick, nonfat milk, and unlimited fruits and vegetables.
FARM TO SCHOOL AT RAMS AND DISTRICT SCHOOLS
Beginning October 2010, RAMS Nutrition Services will be offering Sparten and Regent apples from the Fischers Croix Farm Orchard - http://www.fischerscroixfarmorchard.com/. You will start seeing more offerings from local farms as we move through the seasons in Roseville. The apple supply will also be limited these months because of the hail storm that destroyed acres of apples in Minnesota.
We will be celebrating Farm to School at RAMS during the month of November as we highlight and teach students about squash. Watch for butternut squash soup, sweetened acorn squash and spaghetti squash with marinara sauce.

ALA CARTE/SNACK ITEMS - Ala Carte & Snack Program - full list of offerings
Some District schools meal program will include ala carte or snack items for an extra charge over and above the cost of a breakfast or lunch. The Roseville Area High School has an extensive program. The Roseville Middle School and many of the elementary sites sell small size beverages only.
Please note: Students must have money in their accounts to pay for ala carte snack items. Many school sites have adopted the practice of letting students charge one meal only but all District sites will not serve students snack items if their accounts are in the minus.
How do I restrict my student’s purchases?
Simply call your student’s school nutrition manager and request that ala carte purchases be blocked.
The following guidelines have been implemented concerning the availability of extra items that students may purchase in addition to the school lunch or breakfast:
- 4 oz. juice, 8 oz. & 20 oz. water is available in all schools;
Ala Carte & Snack Options vary by school
- Absolutely no carbonated beverages with high levels of carbohydrates are served.
- Fruit slush is available at RAHS and is 50 to 100% fruit based.
- 100% fruit juices are fruit based with added calcium.
- Snack choices are evaluated for fat content not exceeding 5 grams per serving.
- There is always a variety of fresh fruits and vegetables.
- Ice cream products are selected with as low a fat content as possible.
- Fruit sherbets are 100% fruit based.
- Milk choices include: Skim, Chocolate Skim (22 gm cho), and 1% white.
